Eddos Yam is a tropical vegetable often considered identifiable as the species Colocasia antiquorum, closely related to taro, which is primarily used for its thickened stems. In most cultivars there is an acrid taste that requires careful cooking.
How do you eat Eddos Yam?
Keep it simple by cutting cooked eddo in half or quarters and tossing in a pan sizzling with butter, cooked onions and sliced garlic. Serve hot
